Deliciously Quick Bacon & Egg Breakfast Sliders

A perfect side for mimosas or a quick weekend breakfast, you can whip these up really quick and serve with premade hashbrowns or fruit. Enjoy!

Easy Bacon & Egg Breakfast Sliders

Simple and easy breakfast option that is great for both brunch finger foods and the fam! These can easily work with your meat of choice (bacon, sausage, ham) and can be made ahead of time and stored in the fridge until ready to bake.

Ingredients

  • 4 tbsp Salted Butter
  • 12 large Eggs
  • 8 slices Bacon
  • 2 cups Shredded Cheddar Cheese
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1 tsp Parsley
  • 1/4 cup Milk 2% or Whole

Instructions

  • Preheat your oven to 350 degrees
  • Fry the bacon on your stovetop (or air fryer), set aside
  • Whisk 12 eggs, 1/4 cup 2% (or whole milk) + salt and pepper together in a small bowl
  • Remove excess bacon grease from your frying pan and add 1 tbsp of butter. Stir until melted, then add your egg mixture
  • Cook eggs on medium/low heat, stirring frequently to keep them from browning or sticking, then set aside
  • Butter the bottom and sides of a 9×13 inch baking dish (I just used the stick and schmear it on)
  • Without separating, cut your Hawaiian rolls in half and place the bottom half in the buttered baking dish
  • Melt the remaining butter. Brush butter on the bottom half of the rolls, saving the rest for the top
  • Sprinkle 1/2 tsp garlic salt on the bottom half of the buttered rolls, then layer on 1 cup of shredded cheddar, scrambled eggs, bacon, and the remaining 1 cup of shredded cheddar (things will start to fall off the sides but it's all good)
  • Put the top half of the rolls on, brush with butter, then sprinkle with remaining 1/2 tsp salt and 1/2 tsp garlic
  • Pop in the oven for 10-15 minutes until cheese has melted. Take them out, sprinkle with 1/2 tsp parsley and let cool. Enjoy!
